Incremental encoders unlike variable resistors/potentiometers, they have unlimited travel in any direction, and since they produce digital "gray codes ", you can extend their readings to any range you like. Both directions make them available to increase or decrease values in variables or navigation menus. Finally, many of these rotary encoders come with a central button that can be used to select menu items, reset the counter, or do anything else you can think of that might fit a momentary button.
